Jumbo Jacks Recipe Review

We love baking with our daughter and this recipe is perfect for those occasions in the kitchen for her to get her hands in and create something from a few ingredients………and a mess in the process!  They are an easy, simple biscuit to make that are still delicious and tasty.  It is based on Mary Berry’s Jumbo Jack/ oat biscuit recipe from (aff link) Mary Berry’s Ultimate Cake Book (Second Edition): Over 200 Classic Recipes, but we have modified it a little to make them less sweet, so we will highlight our measures.

Ingredients (makes 28)

  • 175g self raising flour
  • 75g  porridge oats (can use jumbo oats – hence the recipe title, but we use normal oats)
  • 110g granulated sugar
  • 2 tsp of bicarbonate of soda
  • 2 tsp baking powder
  • 260g butter, cubed
  • 3 tsp pf golden syrup

Method

  • The whole process should only take around 30 mins.
  • Preheat oven to 180 degrees, 160 for fan assisted ovens or gas mark 4.
  • In a  mixing bowl, measure the flour, oats, sugar, bicarbonate of soda and baking powder.
  • Heat the butter and golden syrup gently on a pan.  Stir until the butter has completely melted and mixed with the syrup.
  • Pour mixture into the bowl and mix until all the ingredients are fully combined.  This is where the kids can get their hands in to combine the dough together. Our daughter loves this part.
  • Get the dough out and place on a board or work surface and mold into 28 balls around 2cm thick.  Place these on 2 large greased baking trays amking sure to leave space in between as they will spread.  Flatten the tops a little.  You could also roll out the dough and cut the circular shapes if you would prefer.
  • Bake in the oven for 12-15 minutes until golden brown
  • Remove from the oven and transfer on to a separate plate (or wire rack) to cool and harden.

This is an extremely easy bake to make either on your own or with the kids to get them involved in the kitchen and entertain them for a while. There are not a lot of ingredients and although it still can be a little messy (depending on you or your kids), it shouldn’t take weeks to clean up after the whole process.  All in all, they are tasty biscuits/ cookies that will last for a few days with little effort and the most important thing is that the kids are involved and enjoy it!
